Serves 6 as an Appetizer

Ingredients for sweet potato crusted grouper

6 6-8oz. portions of grouper filets
½ cup creole mustard
½ cup olive oil or butter
Salt & Pepper
1 lb. sweet potatoes, skinned

Ingredients for Peach Chutney

Dice 4 ripe peaches or 1 lb. frozen peaches
½ yellow onion
2 oz cran-raisins
1 green bell pepper (diced)
Tsp. cinnamon
½ tsp. cumin
½ tsp. nutmeg
¼ tsp. ground red pepper
½ tsp. ground ginger
2 oz. apple cider vinegar
4 oz. brown sugar

Chutney
For Chutney, sauté onion & bell pepper in a medium size sauce pan for 3 minutes, add all remaining ingredients and simmer 10-15 minutes until thick

Potatoes
Grate the potatoes, set aside

Grouper
For the grouper,heat a large skillet to medium heat. Salt & Pepper the grouper filets and brush with creole mustard. Using olive oil, add sweet potatoes to the skillet and lay the grouper filet on top until potatoes are golden brown. Using a spatula, carefully turn the grouper and finish cooking on the other side. Serve with fresh sautéed spinach

AWESOME recipe!!! It was fairly easy to make and WELL worth the effort! I used the left over chutney in my vegetable stir fry the next evening and it was surprisingly good on veggies.

I plan on sharing this recipe with my friends. It's a keeper for sure!!! Thanks for sharing!

we were just there Fri nite at the Sundae Cafe and i wish I had had enough of an appetite to order this--got the crab cakes (delicious) and had to take most of it home. I was very impressed with the food there and hope to return someday.
